Apple Brie Appetizer Soup

Perfect for Brie cheese lovers, Apple Brie Appetizer Soup will make you swoon with delight. It certainly was the surprise of the year for me! If you love Brie cheese and warm Brie appetizers, you are going to love this yummy soup.

Serve this to your guests on a cold, winter day, to warm up the tummy and to get the party started. Having said that, it also works well in warm weather too. The flavor can't be beat!

Sweet apples make a wonderful contrast to the cheese and combining these two flavors usually pleases the pickiest of eaters.

What you'll need:
- 2 Tbsp of butter
- 1 onion (medium and chopped)
- 2 celery stalks (keep leaves and chop)
- 3 cups chicken stock
- 2 cored and peeled apples (reserve peels and use for garnish)
- 2 Tbsp flour
- 1 8-oz. round of Brie
- 1/4 cup heavy cream
- salt (to taste)
- ground white pepper (to taste)
- Toasted sliced almonds (used for garnish)

What to do:

  1. Slowly melt butter in a saucepan and stir in the following: onions, celery, cored apples. Sauté mixture over low heat. Cook for about 10 minutes and until soft and turns a golden color.

  2. Stir in flour and continue to cook mixture for about 3 minutes, stirring entire time. Pour 1 cup chicken stock into mixture, whisking briskly until thick and bubbly. Whisk in remaining stock and bring to a boil. Reduce heat and cover mixture. Simmer for approximately 15 mintues. Remove remaining solids from sauce pan and purée in food processor or blender. Return puréed mix to saucepan.

  3. Remove rind from Brie cheese and cut into cubes. Brie cheese should be at room temperature if using right away. Otherwise, don't remove the rind to cube it until you are ready to use the cheese.

  4. When you are ready to bring out this apple brie appetizer soup, reheat on low heat, then stir in the Brie cheese cubes. Melt the cheese slowly while you stir it once in awhile. Then, when the cheese is completely melted, whisk it all very briskly.

  5. Purée the mixture a bit if consistency is not yet smooth. Stir in heavy cream. Finally, ladle soup into attractive soup bowls and garnish each bowl with reserved apple curls and toasted almonds.

This recipe serves 4 people and is excellent when used as a first course. Try it as a delicious starter for a roasted chicken dinner or something comparable.
