Making your cold soup a day ahead of time helps to thoroughly chill the soup by refrigerating it. And chilling the bowls or cups you are going to serve the soup in will help it stay cold longer. |

Borscht Soup
Cold soup, Vegetable soup recipe
Borscht soup is a old, old classic cold soup that many Europeans through the ages have used to begin a the many courses of a family meal. Or you can use this beet soup as a main entrée for your next luncheon. It's cooling texture and fragrent flavor is a favorite for many. Try it! It's delicious.
What you'll need:
- 6 medium size beets
- 10 cups of cold water
- juice of 3 lemons
- 3 Tbsp. of granulated sugar
- 2 tsp. of salt
- 3 eggs
- 1 cup of milk
Garnish
- 1 cup of dairy sour cream
- 1 cucumber (peeled, seeded, and diced)
What to do:

Cut each of the beets in half. Place them in a stockpot with the 10 cups of cold water and bring to a boil.

Reduce heat and simmer partially covered until the beets are tender - for about 30 to 40 minutes. If a foam appears, skim it off.

Remove the beets from the water with a slotted spoon and cool to room temperature. Grate the beets and return to the cooking liquid, along with the lemon juice, sugar and salt.

Return all to the stove and simmer for another 15 minutes

Next, beat eggs and milk in a medium bowl. Gradually whisk in in 3 cups of the warm Borscht soup into the egg mixture. Pour this mixture carefully and slowly into the remaining borscht on the stove.

Take the soup off the stove, cover and refrigerate until very cold. Taste for the correct seasoning. The flavor should have a nice balence between sweet and sour.

Ladle into chilled soup bowls and garnish with dollops of sour cream and diced cucumber. Serve it up and enjoy!
