Your Broccoli Bisque Guide
Here's one of my all time favorite soup tips. Ever made soup that was too salty tasting? All you need to do is place a raw potato into your soup pot and simmer it with the soup for about 15 minutes. Not only does the potato slice absorb the extra salt, but as an added snack for the cook, it also absorbs all that flavor and becomes a fantastic taste treat!

Beautiful Broccoli Bisque
Microwave Soup, Bisque
Very easy to make, this Broccoli Bisque serves up beautifully and fills the tummies nicely.
What to do for Broccoli Bisque:
Combine broccoli, onion and chicken broth in a 4-quart microwaveable casserole dish. Microwave on High Power for 10-12 minutes or until boiling. Cover and microwave on Medium Power (50%) for another 5 minutes.
In another microwaveable bowl, combine flour and butter. Microwave on High Power for 45 seconds. Stir in half-and-half.
Purée the broccoli mixture in small batches in a food processor or a blender.
Next, finely chop the reserved beets. Combine the chopped beets and reserved liquid with the remaining 1/4 cup of orange juice and cornstarch in a small saucepan. Bring to a boil over medium heat, stirring constantly.
Remove from the heat and cool to room temperature. Refrigerate until ready to serve. Upon serving, pour the chilled soup into a glass bowl. Pour the thickened beet mixture over the top of the soup. Take a large spoon and make swirling motions through the soup.
