Carrot Tarragon Soup
Microwave Soup, Vegetable
The flavors in this Carrot Tarragon Soup are a wonderful combination. Put a pretty sprig of fresh tarragon on top and you will have a delicious and beautiful soup to serve as an appetizer or a main course.
What you'll need:
- 4 cloves of garlic, minced
- 1 medium yellow onion, chopped
- 10 Tbsp. butter or margarine
- 10 cups chicken stock
- 2 Tbsp. dired tarragon
- 1/4 Tbsp. white pepper
- 6 large carrots, peeled and grated
- Sprigs of fresh tarragon for garnish
What to do:

Place garlic, onion and 8 Tbsp. butter in a 4 quart microwaveable casserole dish. Microwave on High Power for about 4-6 minutes or until vegetables are soft.

Add 2 cups of the chicken stock, dried tarragon and white pepper. Microwave on High Power for 8-10 minutes until volume of mixture is reduced by one-half.

Add remaining a chicken stock and grated carrots. Microwave on Medium Power (50%) for 15-20 minutes or until carrots are well cooked.

Pour soup into processor fitted with steel blade (or a blender). Process in batches until smooth. Return soup to microwaveable 4-quart casserole dish.
- Add remaining 2 Tbsp. of butter, stir and microwave on Medium Power (50%) for 5-8 minutes or until hot.
- Serve in individual soup bowls and garnish with sprigs of fresh tarragon.
