Chicken Soup Caribbean Style
Chicken Soup Recipe

Well, if you are tired of the same ol' chicken soup, here is a recipe that will please all the senses. Chicken Soup Caribbean Style is chock full of flavor and you'll want to go back for more!

What you'll need:
- 1 3.5-lb. whole chicken (fresh)
- 1 small onion (peeled, quartered)
- 1/2 bunch of cilantro
- 1 yam (peeled, sliced in julienn strips)
- 1 red bell pepper (seeded, chopped)
- 1/4 cup cilantro (freshly chopped)
- 1 piece of ginger (peeled, sliced)
- 1 13.5-oz. can of coconut milk
- 1 1/2 Tbsp. ginger root (grated or minced)
- 1 Tbsp. curry powder
- 1 tsp. of Caribbean or Asian chili sauce*
- 1 tsp. ground cinnamon
- 1/2 tsp. ground allspice
- 3 bay leaves
- 2 Tbsp. oil
- 1/4 cup mint (freshly chopped)
- 1/4 cup basil (freshly chopped)
- salt and pepper

*can usually be found in specialty grocery stores or in the Asian area in your local store.

What to do to make Chicken Soup Caribbean Style:

  1. First, rinse the chicken and put into a large stock pot. Add the ginger, cilantro and the onion. Fill the pot with water to approximately 3 inches above the ingredients and then bring to a boil.

  2. Skim the surface of the pot (leaving the vegetables in the pot) to remove any surface residue. Then, reduce the heat and simmer gently for about 45 minutes. Continue to add water to the pot to keep the chicken covered. Remove the chicken to cool and then strain the stock.

  3. When the chicken has cooled, tear the meat into shreds, while discarding the skin and bones.

  4. Next, combine the coconut milk, chilli sauce, cinnamon, allspice and bay leaves in a medium sized bowl and set aside.

  5. In a large pan heated over a medium heat, add the oil, minced ginger root and curry powder. Then add the yam and red bell pepper and sauté them until the peppers have a slightly shiny look to them and the yams begin to soften up. This should be after about 2 minutes.

  6. Add the coconut milk mixture and the chicken stock to the vegetable mixture. Turn the heat to low and simmer this delicious soup until the yams are even more tender - about 15 minutes should do it.

  7. Remove and throw out the bay leaves. Then stir in the shredded chicken and return the soup to a simmer. Finally, stir in the chopped cilantro, basil, mint, and salt and pepper. Serve this yummy soup warm.
