Cooking Tip
Making your chicken soup from scratch? Use an older bird - like a 5-7 pound roaster. The older birds will have been around long enough to develop that wonderful, rich chicken-y flavor and taste that make for a great soup. They really do make for a better broth than the younger and smaller chickens.

Soup History and Recipes
I think that chicken soup deserves its own page. This beloved soup not only pleases the palate, but also sooths everything from uncomfortable tummies to those days of feeling down in the dumps. It's curative characteristics make it the perfect comfort food - a secret shared generously worldwide and down through the ages.
This classic is made by boiling the parts of a chicken - including the bones in water. It's seasoned with spices, flavorings and vegetables. It's often served with noodles, rice, dumplings, or barley. The wide array of recipes that come from the basic soup of the chicken is astounding. If you can think it, you can make it.
A typical soup of the chicken recipe would call for the clear broth made from the chicken parts and served with cut up veggies and small pieces of chicken meat. But, that shouldn't stop you from adding whatever sounds good to you. It's hard to go wrong with this all time favorite soup.
