Your Chilled Asparagus Soup Guide

A cold soup needs to be thoroughly chilled - always.

Making your cold soup a day ahead of time helps to thoroughly chill the soup by refrigerating it. And chilling the bowls or cups you are going to serve the soup in will help it stay cold longer.

This delicate, pale green chilled asparagus soup is so pretty to look at when you garnish it with a swirl of yogurt or sour cream. But not only is it pretty, it's so tasty! Refreshing for those hot summer days or make it for a palate-cleansing appetizer

What you'll need:

  • 2 lbs. of fresh asparagus
  • 4 Tbsp. of butter or olive oil
  • 1 1/2 cups sliced leeks or spring onions
  • 3 Tbsp. of flour
  • 6 1/4 cups of chicken stocks or water
  • 1/2 cup single cream or natural plain yogurt
  • 1 Tbsp. fresh tarragon or chervil (chopped)
  • salt and freshly ground black pepper

What to do:

  1. Cut the top 2 1/2 inches off the asparagus spears and blanch in boiling water for 5 - 6 minutes or until tender. Drain thoroughly. Cut each tip into two or three pieces and set aside.

  2. Trim the ends of the stalks, removing andy brown or woody parts. Chop the stalks into 1/2-inch pieces.

  3. Heat the butter or oil in a heavy-based saucepan. Add the sliced leeks or spring onions and cook over a low heat for 5-8 minutes until softened but not browned. Stir in the chopped asparagus stalks, cover and cook for another 6-8 minutes until the stalks are tender.

  4. Add the flour and stir well to blend. Cook for 3 - 4 minutes, uncovered, stirring occasionally.

  5. Add the stock or water. Bring to a boil, stirring frequently, then reduce the heat and simmer for 30 minutes. Season with salt and pepper.

  6. Purée the soup in a food processor or food mill. If necessary, strain it to remove any coarse fibers. Stir in the asparagus tips, most of the cream or yogurt, and the herbs. Chill well. Stir before serving and check the seasoning. Garnish each bowl with a swirl of cream or yogurt.
