Chilled Cucumber Walnut Soup
Microwave Soup

Want to try something different? Chilled Cucumber Walnut Soup is perfect on a hot summer day, or anytime you get a hankering. And here's the kicker: You can whip up this soup in a jiffy because you can microwave it!

The chopped walnuts in this soup add a nice curnch and a subtle flavor. This soup is also great if you are watching the calories. Diets don't have to be boring!

What you'll need:
- 4 cucumbers, peeled, seeded and sliced
- 3 cups of chicken stock
- 1 Tbsp. chopped onion
- 1/2 tsp. dried dill weed
- 1/2 tsp. salt
- Dash of white pepper
- 2 cups non-fat sour cream or plain yogurt
- Thin slices of unpeeled cucumber or fresh dill sprigs for garnish

What to do:

  1. Place the cucumbers, chicken stock and onion in a large mircrowave safe bowl or casserole dish. Microwave covered, on High Power for 8-9 minutes or until boiling. Microwave on Medium Power (50%) for another 3-5 minutes, until cucumbers are tender. Cool.

  2. Purée cucumber mixture in a food processor or blender. Add dill weed, salt and pepper. Stir in the sour cream and walnuts.

  3. Chill and adjust seasonings to taste. Serve cold, garnished with paper-thin slices of unpeeled cucumber or fresh dill sprigs.

This soup recipe makes enough for 6-8 servings. Enjoy!
