You can make broth from a 4-lb. chicken instead of using legs and thighs.

Just remove the breast first and reserve it for something else.Then, cut up the back, wings, thighs, and legs and then proceed with the recipe below.

Cold Soups

Are you a lover of cold soups like I am? I know that most people don't grow up with the idea of eating soup cold, but when you try some of these delicous recipes that have ingredients ranging from vegetables to fruits, you too, might become a fan of the cold liquid food...

An interesting anecdote: In 1917, when the Ritz-Carlton Hotel on Hotel on Madison Avenue (New York City of course!) first opened, the head chef, Louis Diat (1885 -1857) was getting ready to throw a big party celebrating the opening. The soup on the menu that night was potato and leek soup (a favorite recipe from him mother.)

This is what Diat said about his soup choice for that night. "I remembered how mamam used to cool our breakfast soup, on a warm morning, by adding cold milk to it. A cup of cream, an extra straining, and a sprinkle of chives, et voila, I had my new soup. I named my version of mamam's soup after Vichy, the famous spa located not 20 miles from our Bourbonnaise home, as a tribute to the fine cooking of the region."
