Cold Crab and Avocado Soup

Wow! This delicious summer time cooler will knock your socks off! Try this wonderful Crab
and Avocado soup out on your guests the next time you have them over on a hot day. It's refreshing and sooooo delicious! It's really easy to make and your friends and family will beg you for more, so make sure you have enough!
What you'll need for Crab and Avocado Soup:
- 2 ripe avocados
- 1 Tbsp. of lemon juice
- 2 Tbsp. of canned diced green chilies
- 2 Tbsp. of chopped onion
- 2 cups of homemade chicken broth (or 1 14.5-oz. can of chicken broth)
- 1 cup of half-n-half
- 1/2 tsp. of salt
- 1 6-oz. package of frozen crabmeat, thawed (or use fresh if in season)
- 1 Tbsp. of chopped chives (optional)
What to do:

Peel the avocados and cut into 1-inch cubes.

In a blender or food processor, purée the avocado cubes with the lemon juice, green chilies, onion, and broth.

Pour the avocado mixture into a bowl or airtight container. Stir in the half-n-half, salt and the crabmeat.

Cover and refrigerate until ready to serve.

Ladle the cold soup into chilled bowls or cups and garnish with snipped or chopped chives.
