Creamy Beet Swirl
Cold soup, beet soup recipe
Even if you think you don't like beets, you should give this Creamy Beet Swirl recipe a try. It's delicious, full of good antioxidants and very pretty in its presentation. This cold soup recipe calls for canned beets, but you can also use fresh beets too. Just boil them first and reserve the liquid before following the recipe below.
What you'll need for Creamy Beet Swirl:
- 1 16-oz. can of diced beets
- 1 Tbsp. of butter or margarine
- 1/4 cup of chopped onion
- 1/2 tsp. salt
- pinch of ground cloves
- 1 cup of dairy sour cream
- 1/2 cup of orange juice
- 1 tsp. cornstarch
What to do for Creamy Beet Swirl:

Reserve 1/3 cup of the beets with the liquid and set aside.

Melt the butter or margarine in a small skillet. Add the onion and sauté until tender.

In a blender or food processor , purée the remaining beets and liquid, sautéed onion, salt, cloves, sour cream and 1/4 cup of the orange juice.

Pour puréed mixture into an airtight container and cover and refrigerate for at least 4 hours or overnight. This helps to chill the soup thoroughly and blend the flavors.

Next, finely chop the reserved beets. Combine the chopped beets and reserved liquid with the remaining 1/4 cup of orange juice and cornstarch in a small saucepan. Bring to a boil over medium heat, stirring constantly.

Remove from the heat and cool to room temperature. Refrigerate until ready to serve. Upon serving, pour the chilled soup into a glass bowl. Pour the thickened beet mixture over the top of the soup. Take a large spoon and make swirling motions through the soup.
