Easy Chicken Gumbo
Chicken Soup Recipe
What is it about gumbo that's just so darn good? Here's a super simple recipe you can make in a snap and your family will ask for second helpings -if their not already too full! Serve it with a thick slice of warm bread and you have a meal!
What you'll need:
- 3 cups chicken broth (canned or homemade broth)
- 1 cup cooked chicken, diced
- 1 cup tomatoes, diced *
- 1/3 cup rice, uncooked
- 1/4 medium-sized bell pepper, chopped
- 1/4 medium-sized onion, chopped
- 1/2 cup corn (fresh or frozen)
- 2 tsp. dried basil (use less if fresh)
- 1/2 tsp. pepper
- 1/2 tsp. garlic salt
*if you use canned tomatoes, make sure you add the juice. If using fresh tomatoes, add a small can of tomato sauce.
What to do:

Pretty easy... put all the ingredients in a large pan, bring to a boil, simmer until the rice is done and eat it up!
