Your Lobster Chowder Guide

Cooking Tip
To know if the lobster has been cooked long enough, this is what you need to look for:
- Lobster meat should be white as snow, opaque and elastic.
- The walking legs will easily pull out from the body if cooked long enough.
- If the lobster looks black and oily then, the it is undercooked. |

Lovely Lobster Chowder

Ohhh, the delicious flavor of this Lobster Chowder is one that will have you coming back for more and more and more. When the lobster is fresh and the crowds hungry, you can't help but have a winner. Not difficult at all (unless you are a bit on the squeamish side - you'll have to remove the green stuff - read more about it down below) and you'll be surprised at how quickly it gets eaten up! Enjoy!

What you'll need for Lobster Chowder:
- 4 lobsters about 1 1/4 to 1 1/2 lb. each and alive!)
- 4 Tbsp. butter
- 1 quart of whole milk
- salt and freshly ground black pepper to taste
What to do:

Steam or boil the live lobsters for approximately 18 minutes. (Try not to think to much about the fact that they are alive!) Place the cooked lobbies on platters to cool off and catch the juices - you'll need it later.

After the lobsters have cooled, pick out the meat after cracking the shells. Remove the green stuff which is the liver - also called tomalley and any of the red stuff - coral - also known as roe that might be found in the meat and reserve.

The hard part is over! Now, heat 1 1/2 tablespoons of the butter in a sauce pan and sauté the tomalley and roe in the butter for about three minutes. Then, add more of the butter and 1/4 of the lobster meat into the pot. Sauté the meat, gently stirring occasionally. Continue to add all the lobster meat slowly until all has been sautéed. This should take you about 5 to 10 minutes.

To finish this wonderful chowder, simply add the cream, the reserved liquid from the cooled lobsters and the milk. Simmer the mixture for approximately 1 hour (or a little more if necessary) uncovered and check frequently to make sure it doesn't boil. Add the salt and pepper to taste and serve it up!
This chowder goes very nicely with a fresh green salad and a hunk of fresh bread. Deeeelish!
