Mushroom Scallop Chowder

Hey mushroom lovers! Listen up. Here's a great recipe for Mushroom Scallop Chowder that will make anybody who loves the taste of mushrooms and scallops love it even more. Don't know what to do with all those leftover mushroom stems? Worry no more. This soup recipe is the perfect solution. And it tastes delicious!
What you'll need:
- 3 garlic cloves (finely chopped)
- 1 Tbsp. of butter
- 1 Tbsp. of olive oil
- 3 green onions and most of the useable part of green tops
- 1 1/2 cups mushroom stems (chopped)*
- 1/2 tsp. dried tarragon
- 2 cups water
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 tsp. chicken soup, granules
- 1 1/2 cups of milk
- 2 cups of O'Brien potatoes (frozen foods section)
- 1 cup of half-n-half
- 6-7 fresh large scallops (quartered)
*You can also chop up whole mushrooms.
What to do for Mushroom Scallop Chowder:

In a saucepan, sauté the garlic in the butter and olive oil - don't over cook.

Slice the green onions and green onion tops into 1" diagonal pieces - add to the pan. Sauté until the onions have wilted.

Add the mushrooms and cook over medium heat for approximately 8 minutes. Then, add the tarragon and simmer for another minute.

Next, add the water, salt and pepper, granules of chicken soup, and milk. Simmer on high heat. Make sure you don't let the soup boil.

Add the potatoes and half-n-half. Bring the mixture to a simmer again and cook until the potatoes have become soft. This should take about 8 minutes. Taste to adjust the seasonings.

Add the scallops and stir into the mixture gently.

Now you can do one of two things: either heat the mixture on low for about 4 minutes or, turn off the heat and let the scallops cook in the heated soup broth.
Once heated, ladle this delicious chowder into soup bowls and a great recommendation is to serve it with a crusty bread and a fresh green salad.
