What you'll need:
- 1 16-oz. can of whole tomatoes
- 1 10 1/2-oz. can of condensed cream of mushroom soup
- 1 Tbsp. of chopped chives
OR
- 2 Tbsp. of sliced green onion
- 1/4 tsp. of sugar
- 1/8 tsp. of pepper
- 1/2 cup of dairy sour cream
- 1 cup of shredded Swiss cheese
What to do:
-
Purée tomatoes with the liquid in a blender or food processor.
-
Combine the puréed tomatoes, condensed soup, chives or onion, sugar, and pepper in a medium saucepan. Heat until the mixture begins to boil.
-
Stir in the sour cream. Lower the heat and stir until thoroughly heated about 2-3 minutes. Make sure you do not let the soup boil again or it will curdle the sour cream.
-
Stir in the Swiss cheese and ladle the hot soup into individual bowls.
