Swiss Tomato Mushroom Soup

I love cheese. I love tomatoes. I love mushrooms. And this yummy Swiss Tomato Mushroom Soup has it all! You'll love it too. It's rich and creamy and is the perfect comfort soup on a cold day or a blue day.

But use your imagination. You can make this into a wonderful appetizer soup that you serve before a dinner party - just enough in little cups to whet the appetite. And, it's so easy to make. It'll take you all of 15 minutes. How great is that?

What you'll need:
- 1 16-oz. can of whole tomatoes
- 1 10 1/2-oz. can of condensed cream of mushroom soup
- 1 Tbsp. of chopped chives
OR
- 2 Tbsp. of sliced green onion
- 1/4 tsp. of sugar
- 1/8 tsp. of pepper
- 1/2 cup of dairy sour cream
- 1 cup of shredded Swiss cheese

What to do:

  1. Purée tomatoes with the liquid in a blender or food processor.

  2. Combine the puréed tomatoes, condensed soup, chives or onion, sugar, and pepper in a medium saucepan. Heat until the mixture begins to boil.

  3. Stir in the sour cream. Lower the heat and stir until thoroughly heated about 2-3 minutes. Make sure you do not let the soup boil again or it will curdle the sour cream.

  4. Stir in the Swiss cheese and ladle the hot soup into individual bowls.

This delicious soup recipe serves 4 people.
