Traditional Gazpacho Soup
Hot days are here with the summer months upon us. Nothing like a cold, refreshing traditional gazpacho soup to help take the heat off. Alive with flavor and antioxidants, not only does it taste good, it's good for you too. Really simple to make, you can make this soup recipe in about 5 minutes.

What you'll need:
Soup
- 6 Tomatoes
- 2 Spring onions
- 3 Cucumbers
- 2 glasses of water
- Seasoning (salt, pepper)
Dressing
- 1/2 cup of virgin Olive Oil
- 2 cloves Garlic
- Parsley
- Juice of a lemon
- Freshly baked baguette
What to do:

Make the dressing first: add all the ingredients except for the bread and mix thoroughly.

Next, finely chop all the ingredients together listed under the soup heading and then add to the dressing. Next, add the water and stir everything together well. If you like your Gazpacho on the thicker side, add a little less water.

Serve chilled with the baguette and garnish the soup with the parsley.
